Shiitake mushrooms are one of my favorite ingredients because they are so versatile and packed with health benefits. Today, I’m sharing a recipe for ‘Shiitake Mushroom Stir-fry with Oyster Sauce’ that is guaranteed to be delicious and is incredibly easy to make. This dish offers a savory depth of flavor and a delightful chewy texture, making it a perfect side dish for any meal or even an elegant appetizer.
Main Ingredients- 7 fresh shiitake mushrooms
Seasoning & Other Ingredients- 1/2 Tbsp avocado oil
- 1/3 cup green onion, chopped
- 2 Tbsp water
- 1 Tbsp oyster sauce
- 2/3 Tbsp plum extract (maesilcheong)
- 1/3 Tbsp ginger extract (saenggangcheong)
- 1 tsp sesame oil
- 1/2 Tbsp avocado oil
- 1/3 cup green onion, chopped
- 2 Tbsp water
- 1 Tbsp oyster sauce
- 2/3 Tbsp plum extract (maesilcheong)
- 1/3 Tbsp ginger extract (saenggangcheong)
- 1 tsp sesame oil
Cooking Instructions
Step 1
Prepare 7 shiitake mushrooms. First, trim off the tough stem ends with a knife. Gently wipe away any dirt or debris from the mushroom caps using a damp kitchen towel to preserve their natural aroma and flavor.
Step 2
Slice the cleaned shiitake mushrooms into about 0.5 cm thick pieces. Slicing them slightly thicker than paper-thin will help maintain a pleasant chewy texture after cooking, preventing them from breaking apart.
Step 3
Heat a pan over medium-low heat and add 1/2 Tbsp of avocado oil. Add the chopped green onions (1/3 cup) and stir-fry them until fragrant and softened, about 2-3 minutes. This step infuses the oil with the sweet aroma of the green onions.
Step 4
Once the green onions are fragrant, add the sliced shiitake mushrooms to the pan. Stir-fry them with the green onions. At this stage, if the pan seems dry, don’t worry; we’ll add liquid next.
Step 5
To ensure the mushrooms cook evenly and don’t stick to the pan, add 2 Tbsp of water. Stir everything together (‘shake-shake’ as they say!) to help the mushrooms soften and release their moisture, creating a light sauce base.
Step 6
When the shiitake mushrooms have softened and are slightly cooked, add the oyster sauce (1 Tbsp), plum extract (2/3 Tbsp), and ginger extract (1/3 Tbsp). Stir-fry quickly (‘shake-shake’ again!) to coat all the ingredients evenly with the flavorful sauce.
Step 7
Finally, drizzle in 1 tsp of sesame oil for a nutty finish. Give it a final gentle toss to distribute the sesame oil. Your delicious Shiitake Mushroom Stir-fry with Oyster Sauce is ready to be served. Enjoy it over a warm bowl of rice!
