- Rice water, 1000ml (water from the 3rd or 4th rinse when washing rice for a bowl)
- Salt or soup soy sauce, 1 teaspoon (adjust to taste)

Today, I’ll show you how to make a deeply savory and nutritious seaweed soup using rice water, without any meat. The mildness and umami from the rice water will blend beautifully with the seaweed for a wonderful meal.

First, rinse your rice thoroughly. Discard the first two washes and collect the milky water from the 3rd or 4th rinse; you’ll need about 1000ml of this rice water. Meanwhile, soak the dried seaweed in cold water for about 10-15 minutes until rehydrated. Rinse it well, squeeze out excess water, and cut it into bite-sized pieces for easier eating.
Step 3
Pour the collected rice water into a pot and bring it to a boil over medium-high heat. Once boiling, add the rehydrated seaweed and reduce the heat to medium-low. Let it simmer for about 5-10 minutes until the seaweed is tender. Season with salt or soup soy sauce to your preference. It’s best to start with a small amount and add more as needed while tasting.

After the seaweed is tender and seasoned, bring the soup back to a gentle simmer for another 2-3 minutes. This allows the flavors to meld together, creating a richer taste.
