Main Ingredients- Boiled dried radish greens (siraegi) 400g
- Red chili pepper 1/2
- Green chili pepper 1
- Minced garlic 1 Tbsp
- Minced green onion 1 Tbsp
- Chopped scallions 1 Tbsp
- Doenjang (Korean soybean paste) 3 Tbsp (mix of homemade and toasted doenjang recommended)
- Sesame seeds 1 tsp
- Sesame oil 1 tsp
Cooking Instructions
Step 1
First, prepare the chili peppers that will add flavor and color to your Siraegi Doenjang Muchim. Wash the red and green chili peppers, remove their stems, and finely mince them. You can remove the seeds if you prefer a milder taste.
Step 2
For this recipe, we are using pre-boiled siraegi. Cut the siraegi into bite-sized pieces, approximately 3cm in length. Avoid cutting them too finely, as this can affect the texture. If you are using dried siraegi, soak them in water for at least 1 hour until softened, then boil them in hot water until tender. Adjust the soaking and boiling times based on the toughness of the siraegi. Properly soaking and boiling is key to achieving a tender dish without a raw taste.
Step 3
Add the savory doenjang to the chopped siraegi to begin the seasoning process. Using a mix of homemade doenjang and store-bought toasted doenjang can create a deeper, more complex flavor. You can also use just one type of doenjang according to your preference.
Step 4
Incorporate the minced red and green chili peppers, along with the minced garlic and chopped scallions. These ingredients will combine with the siraegi to create a delicious marinade.
Step 5
Drizzle in the sesame oil for a fragrant aroma. Now comes the crucial step: ‘vigorously’ mixing. Ensure the ingredients are evenly coated and the doenjang is well incorporated by mixing with your hands, applying firm pressure. Gentle mixing might result in clumps of doenjang or uneven distribution, so thorough mixing is the secret to a well-seasoned dish.
Step 6
Finally, sprinkle in the sesame seeds for a nutty flavor. Gently toss again to distribute the seeds evenly. Taste the dish at this stage and if it seems a bit bland, add a little more doenjang to adjust the seasoning. For those who like it spicier, a pinch of chili flakes can also be added.
Step 7
And just like that, a simple yet incredibly flavorful Siraegi Doenjang Muchim is complete! The combination of savory doenjang and tender siraegi creates a wonderful side dish that will be a hit on any table. Enjoy a healthy and delicious meal with this recipe from ‘Sumine Banchann’!
