Savory Seasoned Broccoli Salad Recipe
Nutritious Broccoli Seasoned Simply
Instead of always having broccoli as a salad or just blanched with a dipping sauce, this recipe transforms it into a delicious side dish, seasoned just like traditional Korean seasoned vegetables (namul). It’s a wonderful way to add a new, flavorful dimension to your rice meals. Enjoy this simple yet nutritious broccoli side dish!
Main Ingredients- 1/2 head of fresh broccoli
Seasoning Ingredients- 1/3 Tbsp soup soy sauce (for umami)
- 1/2 tsp salt (to taste)
- 1 tsp minced garlic (for a pungent flavor)
- 1/2 Tbsp toasted sesame seeds
- 1/3 Tbsp sesame oil
- 1/3 Tbsp soup soy sauce (for umami)
- 1/2 tsp salt (to taste)
- 1 tsp minced garlic (for a pungent flavor)
- 1/2 Tbsp toasted sesame seeds
- 1/3 Tbsp sesame oil
Cooking Instructions
Step 1
Break the fresh broccoli into bite-sized florets (about 2-3 cm). Bring a pot of water to a boil and blanch the broccoli for approximately 30 seconds. This quick blanching helps retain the broccoli’s crisp texture while minimizing nutrient loss.
Step 2
Immediately after blanching, transfer the broccoli to a bowl of cold or ice water to shock and cool it rapidly. This step enhances the vibrant green color and prevents the broccoli from becoming mushy. Once thoroughly cooled, gently squeeze out as much water as possible with your hands. This ensures the seasoning will adhere well and prevents the dish from becoming watery.
Step 3
To the drained broccoli, add all the seasoning ingredients except for the sesame oil: soup soy sauce, salt, minced garlic, and toasted sesame seeds. Now, gently toss and mix the ingredients with your hands (like ‘jo-mul jo-mul’). Be careful not to mash the broccoli; the key is to evenly distribute the seasoning throughout.
Step 4
Finally, add the sesame oil and lightly mix everything together once more. The nutty and aromatic flavor of the sesame oil will elevate the taste of the seasoned broccoli. Adding sesame oil at the end helps preserve its fragrant aroma.
Step 5
Transfer the finished seasoned broccoli to an airtight container and store it in the refrigerator. While delicious immediately, allowing it to chill and meld in the refrigerator for a while will let the flavors deepen further. Enjoy this versatile side dish with your meals!
