Instead of always having broccoli as a salad or just blanched with a dipping sauce, this recipe transforms it into a delicious side dish, seasoned just like traditional Korean seasoned vegetables (namul).   • 1/3 Tbsp soup soy sauce (for umami)
  • 1/2 tsp salt (to taste)
  • 1 tsp minced garlic (for a pungent flavor)
  • 1/2 Tbsp toasted sesame seeds
  • 1/3 Tbsp sesame oil

Break the fresh broccoli into bite-sized florets (about 2-3 cm). Bring a pot of water to a boil and blanch the broccoli for approximately 30 seconds. This quick blanching helps retain the broccoli’s crisp texture while minimizing nutrient loss.

Immediately after blanching, transfer the broccoli to a bowl of cold or ice water to shock and cool it rapidly. This step enhances the vibrant green color and prevents the broccoli from becoming mushy. Once thoroughly cooled, gently squeeze out as much water as possible with your hands. This ensures the seasoning will adhere well and prevents the dish from becoming watery.

To the drained broccoli, add all the seasoning ingredients except for the sesame oil: soup soy sauce, salt, minced garlic, and toasted sesame seeds. Now, gently toss and mix the ingredients with your hands (like ‘jo-mul jo-mul’). Be careful not to mash the broccoli; the key is to evenly distribute the seasoning throughout.
