Ingredients
  • 1 bag of bean sprouts (approx. 300g)
  • Anchovies for broth (a small handful)
  • 1 piece of dried kelp (5x5cm)
  • 3 Tbsp sesame oil
  • 2 Tbsp Korean soy sauce (Guk-ganjang)
  • 1 Tbsp minced garlic
  • 1 Tbsp salt
  • Toasted sesame seeds (for garnish)

Cooking Instructions

Step 1

To achieve a deeper, more complex flavor, let’s start by making a simple broth. In a pot, combine water with the anchovies and dried kelp. Bring to a boil and simmer for about 10 minutes. Strain the broth, discarding the anchovies and kelp, and set the broth aside. (If you don’t have these ingredients or are short on time, you can skip this step and use plain water or store-bought broth instead.)

Step 2

Rinse the bean sprouts thoroughly under cold running water and drain them well. Place the cleaned bean sprouts into a pot or a deep pan (wok). Add enough water to completely cover the bean sprouts.

Step 3

Once the water comes to a boil, add the bean sprouts and cover the pot. Let them blanch for about 3-5 minutes, or until they are about halfway cooked. Be careful not to overcook them, as they can become mushy.

Step 4

Drain the blanched bean sprouts completely using a colander. Discard the water they were cooked in. (If you are concerned about any potential raw smell from the bean sprouts, you can rinse them under cold water after blanching and then drain.)

Step 5

Return the drained bean sprouts to the pot or pan. Pour in about half the amount of the prepared broth, enough to partially submerge the sprouts. (If you are using plain water, add it at this stage.)

Step 6

Add 3 tablespoons of sesame oil to enhance the nutty aroma and flavor.

Step 7

Stir in 2 tablespoons of Korean soy sauce (Guk-ganjang) to bring out the natural taste of the bean sprouts. If you don’t have Guk-ganjang, you can use regular soy sauce (Jin-ganjang), but adjust the quantity accordingly.

Step 8

Add 1 tablespoon of minced garlic for a fragrant touch. Cook over medium heat, stirring occasionally, allowing the bean sprouts and seasonings to meld together. Make sure to stir to prevent the garlic and soy sauce from burning.

Step 9

As the bean sprouts begin to soften, add 1 tablespoon of salt to season the dish. Taste and adjust the salt level according to your preference.

Once a delicious aroma fills the air and the liquid has slightly reduced to a savory sauce, sprinkle generously with toasted sesame seeds. Give it a final mix, and your delicious and savory seasoned bean sprouts are ready!
