Main Ingredients
- 125g prepared mixed seafood (shrimp, squid, clam meat, etc.)
- 1/2 medium carrot (approx. 50g)
- 1 bunch enoki mushrooms (approx. 50g)
- 1 bunch spinach (approx. 50g)
- 1/2 medium onion (approx. 50g)
- 150g sweet potato glass noodles
Seasoning & Others
- 4 Tbsp soy sauce (60ml)
- Pinch of black pepper
- 2 Tbsp sesame oil (30ml)

Cooking Instructions
Step 1
First, let’s prepare the glass noodles, the foundation of this japchae. Soak the dried noodles in cold water for at least 1 hour until they are softened. Once rehydrated, boil them in water for 5-7 minutes. After boiling, rinse them under cold water to maintain their chewy texture. This step ensures the noodles are not sticky or mushy and will absorb the flavors beautifully.
Step 2
Wash the carrot thoroughly, peel it, and then julienne it into strips about 0.5cm thick. Thinly sliced carrots not only look appealing but also provide a pleasant texture.

Slice the onion into similar strips, about 0.5cm thick. The onion will add a natural sweetness that enhances the overall flavor profile of the japchae.

Heat a generous amount of cooking oil in a large frying pan. Sauté the julienned carrots and onions separately. Adding a tiny pinch of salt to each while sautéing brings out their natural sweetness and adds a subtle seasoning. Cook over medium-high heat until they are tender-crisp, avoiding overcooking.

Next, stir-fry the seafood in a separate pan or the same pan with a little cooking oil. Seafood cooks quickly, so stir-fry over medium-high heat until just cooked through. Be careful not to overcook, as it can become tough. Ensure the seafood is well-cooked to avoid any fishy smell.

Now it’s time to bring everything together. Add the sautéed vegetables, enoki mushrooms, spinach, and cooked seafood to the frying pan. Stir-fry over medium heat for about 1 minute, allowing the ingredients to combine. Then, add 4 tablespoons of soy sauce, a pinch of black pepper, and 2 tablespoons of sesame oil. Reduce the heat to low and continue to stir-fry for another 2 minutes, allowing the flavors to meld beautifully.
