Boil the Eggs: Place the eggs in a pot and cover them with water. Add 1/2 teaspoon of salt to the water, which helps prevent cracking and makes peeling easier. Once the water comes to a rolling boil, carefully add the eggs and cook for 10-12 minutes for hard-boiled eggs. Immediately transfer the boiled eggs to an ice bath (a bowl of cold water with ice) to stop the cooking process. Once cooled, peel the eggs gently. Peeling while still slightly warm can make it easier.

Cook Bacon and Scallions: Thoroughly wash the scallions and finely chop them. Cut the bacon into bite-sized pieces. Heat a skillet over medium-low heat and add the bacon. Cook until it becomes crispy and renders its fat. You shouldn’t need to add any extra oil since the bacon will release plenty. Once the bacon is cooked, add the chopped scallions to the pan and sauté for about 1-2 minutes, just until they soften slightly. You want to maintain some of their crispness! Remove the cooked bacon and scallions from the pan and place them on a paper towel-lined plate to drain excess grease.

Mash Eggs and Combine: Place the peeled hard-boiled eggs in a mixing bowl. Use a fork or a potato masher to coarsely mash the eggs. Avoid mashing them into a fine paste; leaving some chunks will provide a better texture. Add the cooked bacon and scallions to the mashed eggs. Then, add the mayonnaise generously. Mix everything together until well combined.

Season to Taste: Now, let’s perfect the flavor! Add salt, pepper, and sugar according to your preference. Start with a small amount of salt, as mayonnaise already contains salt. Taste and adjust as needed. If you prefer a slightly sweeter spread, add a bit more sugar. For an extra depth of flavor, a tiny pinch of chicken bouillon powder or MSG can be added, but this is entirely optional. Stir everything thoroughly until the seasoning is evenly distributed.
