Savory Scallion and Clam Meat Pancake
Deliciously Sweet Scallion and Clam Meat Pancake – So Tasty!
This is a savory pancake with clam meat that I occasionally make as a special treat. I bought pre-shelled clam meat that looked fresh and used the leftover half cup to make this delicious pancake, after using some for soup. The chewy clam meat and crisp scallions make a wonderful combination.
Ingredients- 1 large bunch of scallions (pre-cleaned preferred)
- 1/2 cup shelled clam meat
- 1/2 cup all-purpose flour or pancake mix
- 3 eggs
- 2 Tbsp cooking wine (like Mirin)
- Generous amount of cooking oil
- 1 pinch of salt
Cooking Instructions
Step 1
First, thoroughly wash the scallions. If you purchase them pre-cleaned, it will be even more convenient. If the scallions are too long, cut them in half to fit your pan size.
Step 2
Rinse the clam meat under running water and drain it well in a sieve to remove excess moisture. To eliminate any fishy odor, mix in 2 tablespoons of cooking wine and let it marinate for a while.
Step 3
In a large bowl, add the prepared scallions. Ensure they are cut to a manageable size so they can mix well with the batter.

Sprinkle 1/2 cup of all-purpose flour (or pancake mix) over the scallions. Crack in 3 eggs generously. Add a pinch of salt for seasoning. Use only about 1/3 cup of cold water; adjust the amount of water based on the desired batter consistency.
Step 5
Using a spatula or your hands, gently mix everything together until just combined. Avoid overmixing; you want all the ingredients to be incorporated without developing the gluten too much.
Step 6
Now, heat a frying pan over medium heat. Add a generous amount of cooking oil. Using plenty of oil is key to achieving a crispy pancake.
Step 7
Pour the batter onto the heated pan and spread it out evenly. Arrange the marinated clam meat over the batter. Use a spatula to gently press down on the clam meat, helping it adhere to the batter so it doesn’t fall off during cooking.
Step 8
Once one side is golden brown and cooked through, carefully flip the pancake. Gently press down again with the spatula and cook the other side until it’s also golden brown and crispy.
Step 9
Using plenty of oil makes the pancake easier to handle and ensures it turns out extra crispy. Cooking over medium heat from start to finish will prevent burning and result in a delicious pancake.
