  • Dried radish greens (Mucheong Siraegi) 380g
  • Green onions, a suitable amount (finely chopped)

Seasoning Ingredients

  • Fish sauce 3 Tbsp
  • Minced garlic 1 Tbsp
  • Perilla oil 2 Tbsp
  • Soup soy sauce 1/2 Tbsp
  • Anchovy broth 1/2 cup

First, rinse the dried radish greens thoroughly several times to remove any dirt or impurities. After rinsing well, squeeze out excess water. This step helps to reduce any bitterness and allows the greens to absorb seasonings better.

Cut the prepared radish greens into bite-sized pieces. If they are too long, they can be difficult to eat. Place the cut greens in a pan. Add 3 Tbsp of fish sauce and 1 Tbsp of perilla oil (from the seasoning ingredients) and sauté over medium heat. This process helps to mellow out any raw flavor and adds a nutty aroma.

Once the greens are somewhat sautéed, pour in 1/2 cup of anchovy broth and simmer until the greens are tender and the liquid has reduced. Continue to cook over medium-low heat, allowing the flavors to meld. This simmering step makes the radish greens much more tender and flavorful.

When most of the liquid has evaporated, add 1 Tbsp of minced garlic, 1/2 Tbsp of soup soy sauce, and the remaining 1 Tbsp of perilla oil. Stir well and continue to sauté. It’s important to cook the greens thoroughly until they are soft and well-seasoned, ensuring they don’t stick to the pan. Sautéing for at least 3-5 minutes will enhance the flavor.

Finally, add the finely chopped green onions. If you like, sprinkle some sesame seeds on top. The mild pungency of the green onions and the nutty flavor of the sesame seeds will further enhance the overall taste.
