A crowd-pleasing Sausage and Vegetable Stir-fry, also known as ‘Ssoya’! Sausages are delicious on their own, but when stir-fried with colorful vegetables and a savory-sweet sauce, they become absolutely irresistible. This dish is a guaranteed hit for all ages.
Main Ingredients- 200g sausages (about 2-3 pieces)
- Assorted vegetables (use any available like onion, bell peppers, mushrooms, carrots)
- A pinch of sesame seeds (for garnish)
Cooking Instructions
Step 1
First, prepare the sausages by making bite-sized cuts. Since the sausages I used were quite long, I sliced them in half. You can also blanch them briefly in boiling water to make them firmer and remove excess grease. Prepare your assorted vegetables by chopping them into bite-sized pieces. Feel free to use any vegetables you have on hand! I only had onions, but bell peppers, mushrooms, or carrots would also be great additions. Aim for pieces similar in size to the sausages for a balanced bite.
Step 2
Now, let’s make the special sauce for our delicious Ssoya! In a bowl, combine 1 tablespoon of gochujang, half a tablespoon of soy sauce, 2 tablespoons of ketchup, and 1 tablespoon of oyster sauce. Add half a tablespoon of minced garlic for aromatic depth, 1 tablespoon of plum extract (or mirin), and half a tablespoon of oligodang (corn syrup or honey) for a glossy finish. Whisk everything together until well combined. Having the sauce ready beforehand makes cooking much quicker.
Step 3
Heat a lightly oiled pan over medium-high heat. Add the prepared sausages and onions and stir-fry. If you’re using firmer vegetables like bell peppers or mushrooms, add the onions first. Stir-fry until the onions become slightly translucent, then add the other vegetables and continue to stir-fry. Avoid overcooking the vegetables, as they can become mushy. It’s best to stir-fry quickly over high heat.
Step 4
Once the vegetables are partially cooked, add the prepared special sauce to the pan. Stir well to coat the sausages and vegetables evenly with the sauce. Keep stir-frying, ensuring the sauce doesn’t burn, and mix the ingredients quickly. The key is to maintain the chewy texture of the sausages and the crispness of the vegetables.
Step 5
Finally, transfer the finished Sausage and Vegetable Stir-fry to a serving plate. Sprinkle some sesame seeds on top for a beautiful garnish and an extra touch of flavor.
