Savory Sausage and Vegetable Stir-Fry
The Ultimate ‘Rice Thief’ Side Dish: Sausage and Vegetable Stir-Fry, Loved by Everyone from Adults to Kids!
Today, I made a generous batch of sausage and vegetable stir-fry to serve as a delightful side dish. This recipe is simple yet incredibly flavorful, perfect for any meal!
Main Ingredients- 550g Vienna sausages
- 1 Onion
- 80g Button mushrooms
Flavorful Sauce- 10 Tbsp Ketchup
- 2.5 Tbsp Gochujang (Korean chili paste)
- 2 Tbsp Oyster sauce
- 5 Tbsp Oligodang (corn syrup or other liquid sweetener)
- 2 Tbsp Vinegar
- 10 Tbsp Ketchup
- 2.5 Tbsp Gochujang (Korean chili paste)
- 2 Tbsp Oyster sauce
- 5 Tbsp Oligodang (corn syrup or other liquid sweetener)
- 2 Tbsp Vinegar
Cooking Instructions
Step 1
First, let’s prepare the star of this dish: the sauce! In a bowl, combine 10 tablespoons of ketchup, 2.5 tablespoons of gochujang, 2 tablespoons of oyster sauce, 5 tablespoons of oligodang, and 2 tablespoons of vinegar for that perfect sweet and tangy balance. Using oligodang instead of sugar adds a lovely sheen.
Step 2
Now, let’s get the Vienna sausages ready. For a fancier presentation, you can make two deep cuts lengthwise on each sausage, creating a ‘octopus’ shape when cooked. Alternatively, a simple cross-cut as shown in the photo works well. If you’re in a hurry, you can skip the cuts altogether, but be aware the sausages might burst while cooking! A little tip: making cuts helps the sauce penetrate better.
Step 3
Lightly grease a heated pan with a little cooking oil, then add the prepared Vienna sausages to stir-fry first. The sausages will release their own flavorful oils, so you don’t need much extra oil.
Step 4
Continue to stir-fry until the cuts on the sausages begin to open up, or until you hear a gentle ‘pop-pop’ sound as they start to slightly burst. This process enhances the sausage’s flavor and texture.
Step 5
Once the sausages are nicely browned, add the chopped onion and stir-fry together. The onion will soften and caramelize, absorbing the delicious sausage drippings and becoming wonderfully sweet.
Step 6
When the onion turns translucent and starts to sweeten, add the sliced button mushrooms. Cook the mushrooms only briefly; overcooking can release too much water and make them soggy. We want to maintain a pleasant bite.
Step 7
Stir-fry the mushrooms just enough to coat them lightly in the oil and rendered flavors. Then, pour in the pre-mixed sauce you prepared earlier. It’s important to coat all the ingredients evenly with the sauce.
Step 8
Now, turn up the heat to medium-high and stir-fry briskly, ensuring the sauce coats every piece of sausage and vegetable. Cook until the sauce thickens slightly and glazes the ingredients beautifully. Your delicious Sausage and Vegetable Stir-Fry is ready!
Step 9
Let the stir-fry cool slightly before transferring it to an airtight container for refrigeration. It keeps well in the fridge for about 7 days. Our household of two enjoyed this as a staple side dish for 5 consecutive meals! It’s also fantastic served over a bowl of rice for a quick and satisfying meal.
