  • 2 frankfurter sausages (thickness can be adjusted to your preference)

  • 0.5 red chili pepper (seeds removed and finely minced)
  • 1 spicy green chili pepper (seeds removed and finely minced)
  • 1 Tbsp cooking oil

First, prepare the two frankfurter sausages. Cut them in half lengthwise, then slice them into approximately 0.5cm thick strips. Slicing them this way ensures they cook evenly and meld beautifully with the egg mixture.

In a bowl, crack the fresh egg. Add the finely minced red and green chili peppers. Pour in 1 teaspoon of tuna extract for an umami boost. Whisk everything together thoroughly with a fork or whisk until the yolk and white are well combined. The generous amount of chilies will add a wonderful piquant flavor!

Now, heat a small frying pan over low heat. Add 1 tablespoon of cooking oil. Add the sliced frankfurter sausages to the pan. Gently separate them so they don’t stick together, and lightly stir-fry for about 1 minute until they are slightly golden brown on the outside. This initial stir-fry enhances the sausages’ savory flavor.

Once the sausages are lightly fried, pour the prepared egg mixture evenly over the pan. Keep the heat on low and allow the egg to set gradually. If there’s any uncooked egg mixture pooling on top, gently poke it with a chopstick or skewer to let it flow down towards the pan. This technique significantly speeds up the cooking time. When the egg is about halfway set, carefully flip it over with a spatula and cook the other side until golden brown.
