  • Water (as per packet instructions)
  • 1 Onion
  • 1 Tbsp Cooking oil
  • 1 Tbsp Butter
  • Pinch of black pepper

Cooking Instructions

Step 1

First, prepare the eggs that will add a special flavor to your curry. We’re preparing 4 eggs in total, aiming for 2 per person. Wash the eggs thoroughly under running water. This removes any dirt from the shells, ensuring a cleaner and tastier final dish.

Step 2

Before boiling the eggs, fill a pot with plenty of water. Add 1 tablespoon of vinegar and 1 tablespoon of coarse salt (or sea salt) and mix. This step makes peeling the eggs much easier later on. For hard-boiled eggs, aim for about 10 minutes of cooking time. While they boil, gently stir the eggs in one direction; this helps the yolk stay centered, which is a nice touch!

Step 3

While the eggs are boiling, prepare the onion that will deepen the curry’s flavor. Slice the onion thinly for caramelization. Cutting the onion into uniform slices will ensure even cooking and better results.

Step 4

Now, let’s prepare to sauté the onions. Add 1 tablespoon of butter to a pot and melt it slowly over medium-low heat. Using butter will enhance the onion’s flavor and create a richer taste.

Step 5

Once the butter has melted, add all the sliced onions to the pot and sauté them together. Keep the heat at medium-low to prevent the onions from burning.

Step 6

As the onions sauté, add a pinch of freshly ground black pepper for an extra layer of aroma. The peppery note will complement the sweetness of the onions beautifully.

Step 7

Once the onions start to caramelize, it’s crucial to stir them continuously, scraping the bottom of the pot, to prevent them from burning. This process is key to maximizing the onions’ natural sweetness and developing a rich flavor.

Step 8

Continue cooking until the onions turn a golden brown and become beautifully caramelized. You can cook them longer for a deeper brown color, but I find this shade to be just right. Be careful not to overcook, as it can lead to a bitter taste.

Step 9

Transfer the caramelized onions to a separate plate for now. Carefully peel the boiled eggs. If the shells are difficult to remove, gently tap them to create small cracks before peeling – this often helps.

Step 10

Now, we’ll make the ‘roasted eggs’ that add that special touch to the curry. In the same pot (or a clean pan), add a generous amount of cooking oil. Place the peeled eggs in the hot oil and roll them around to ensure they get a nice golden-brown sear on all sides. Adjust the heat to prevent burning and keep them rolling gently. Roasted eggs are significantly more flavorful and delicious than plain boiled eggs!

Step 11

Once the eggs are nicely roasted, set them aside briefly. Return the caramelized onions to the pot, add a generous amount of water to form the curry base, and bring it to a quick boil. This will soften the onions and create a flavorful broth.

Step 12

If you’re using a standard curry powder mix, simply add it to the boiling water and stir to dissolve. I used ‘Curry Queen,’ so I first added the broth sachet provided with the product before adding the powder. Be sure to follow the instructions on your specific curry product.

Step 13

As you stir the curry powder into the mixture, it will thicken, and the inviting aroma of delicious curry will begin to fill the air. The sweetness of the onions and the rich spices will transform into a truly wonderful dish.

Step 14

This is the final step! Let the curry simmer so the sauce coats the onions and roasted eggs beautifully. If you prefer a spicier kick, you can add a spicy curry paste or a bit of red pepper powder for a more robust flavor. Simmer everything together until the flavors meld perfectly, and your delicious roasted egg curry is ready to enjoy!
