Rice Ball Ingredients
- 1 bowl of cooked rice (approx. 200g), warm
- 2 strips of seasoned burdock root (for kimbap)
- 1 strip of pickled radish (danmuji, for kimbap)
- 1 packet of seasoned seaweed flakes (gimjaban or ‘bapirang’)
- 1 Tbsp toasted sesame seeds
- 1 tsp sesame oil
Cooking Instructions
Step 1
The pickled radish and seasoned burdock root are key to the deliciousness of these rice balls, so let’s prepare them. Gently pat dry the kimbap-style burdock root and pickled radish strips to remove excess moisture. Then, finely chop them into very small pieces. This ensures they integrate well with the rice grains, adding both texture and flavor.
Step 2
In a bowl, place one bowl of warm cooked rice. Add the finely chopped pickled radish and burdock root. Next, add one packet of seasoned seaweed flakes (gimjaban or ‘bapirang’), a teaspoon of fragrant sesame oil, and one tablespoon of toasted sesame seeds. If you don’t have gimjaban or ‘bapirang’, you can also finely crumble seasoned seaweed sheets as a substitute. Mix all these ingredients together thoroughly until well combined. This creates your flavorful rice ball filling.
Step 3
Now, it’s time to shape the rice mixture. Lightly dampen your hands with water or wear disposable gloves to prevent the rice from sticking. Gently form the mixture into compact, bite-sized balls. For a beautiful finish and extra nutty flavor, sprinkle a few more toasted sesame seeds on top of each rice ball. These simple yet satisfying rice balls are now ready to be enjoyed as a delightful lunchbox treat!
