Savory Pork Stir-fry with Bok Choy
Easy and Delicious Soy-Sauce Marinated Pork Belly Stir-fry Recipe
Introducing a delightful soy-sauce marinated pork stir-fry featuring tender pork shoulder and the fresh crunch of bok choy. Main Ingredients- 400g pork shoulder, sliced thinly (thinly sliced pork neck is also a good option)
- 4 heads of bok choy
- 1 onion
- 1 green onion (scallion)
- 1/2 pack of enoki mushrooms
Cooking Instructions
Step 1
Prepare 400g of fresh pork shoulder. If you prefer a softer texture, thinly sliced pork neck works wonderfully as well.
Step 2
Cut the pork into bite-sized pieces. Avoid cutting them too small to maintain a pleasant texture after stir-frying.
Step 3
In a bowl, combine the cut pork with 2 Tbsp soy sauce, 1 Tbsp oyster sauce, 1 Tbsp sugar, 1 Tbsp minced garlic, 2 Tbsp cooking wine, 1/4 tsp ginger powder, and a pinch of black pepper. (Alternatively, you can use 1/2 tsp of grated fresh ginger instead of ginger powder.)

Gently mix the ingredients with your hands until the marinade evenly coats the pork. Let it marinate for about 10 minutes to allow the flavors to deeply infuse.

While the pork is marinating, prepare the vegetables. Thinly slice the onion. Cut the bok choy into quarters, keeping the base intact. Slice the green onion diagonally.

Heat a pan over medium-high heat. Add the marinated pork and sliced onion, and stir-fry until the onion becomes translucent and the pork is browned, about 3-5 minutes. The pork will release some juices.

Once the pork and onions are about two-thirds cooked and a savory sauce begins to form,

Add the prepared bok choy, enoki mushrooms, and green onion to the pan. Continue to stir-fry.

Increase the heat to high and stir-fry quickly to prevent the vegetables from becoming soggy. Cook just until the bok choy turns bright green and is tender-crisp. Overcooking will diminish its delightful crunch.
Step 10
Finally, sprinkle with 1 Tbsp toasted sesame seeds and toss to combine. Your delicious pork and bok choy stir-fry is ready! For an extra nutty aroma, you can add 1 Tbsp of sesame oil at the end.
