Savory Pork Floss Fried Rice

I made pork floss and used it to make fried rice. It was incredibly satisfying!

Fried Rice Ingredients

  • 1 bowl of cooked rice
  • 1 Tbsp soy sauce
  • 1 Tbsp sesame oil
  • A pinch of toasted sesame seeds

Pork Floss Ingredients

  • 250g minced pork
  • 1 Tbsp sugar
  • 1 Tbsp cooking wine (e.g., Mirin)
  • 1 Tbsp minced garlic
  • 1 Tbsp ginger juice (or 1/2 tsp minced ginger)
  • 1 Tbsp Doubanjiang (fermented chili bean paste)
  • 2 Tbsp soy sauce
  • Generous amount of black pepper (to taste)

Cooking Instructions

Step 1

Prepare your ingredients. This recipe makes one serving of fried rice and enough pork floss for two servings. We’ll set aside one serving of pork floss for later use.

Gently pat the minced pork with paper towels to absorb any excess moisture and blood. This helps to reduce any gamey odor and ensures a cleaner flavor.

In a bowl, combine the drained minced pork with all the pork floss seasoning ingredients (sugar, cooking wine, minced garlic, ginger juice, Doubanjiang, 2 Tbsp soy sauce, and pepper). Mix well with your hands until everything is thoroughly combined. Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld. For an even richer taste, you can marinate it for 2-3 hours.

Heat a non-stick pan over high heat. Add the marinated pork to the pan. Use a spatula or chopsticks to continuously break up the pork and spread it out as it cooks. This prevents clumping and helps achieve a fluffy texture.

Once the pork is mostly cooked and has released some fat, pour 1 Tbsp of soy sauce around the edges of the pan. Let the soy sauce sizzle and caramelize slightly against the hot pan for added depth of flavor.

Continue stir-frying the pork with the soy sauce, stirring constantly to evaporate any remaining moisture and oil. Cook until the pork is dry and crumbly, resembling a fluffy floss. Your delicious pork floss is now ready! Set aside about one-third of the pork floss for the fried rice, and let the rest cool before storing it.

Now, let’s make the fried rice. Add 1 bowl of warm cooked rice and 1 Tbsp of sesame oil to the pan. Gently mix the rice and sesame oil, ensuring each grain is lightly coated. This step helps prevent the rice from sticking and makes it more fluffy.

Turn the heat up to high. Add the reserved pork floss to the pan with the rice and stir-fry quickly for about 1-2 minutes, ensuring the rice is heated through and fluffy. Just before turning off the heat, sprinkle in the toasted sesame seeds and give it a final toss. This adds a wonderful nutty aroma.
