Kimbap Ingredients
- 6 sheets of kimbap seaweed (gim)
- 3 servings of cooked rice (approx. 3 bowls)
- 3 kimbap-style pickled radish rolls
- 2 thick strips of pork belly
- 20 fresh lettuce leaves
- 2/3 fresh carrot
- A pinch of fine salt
- 2 Tbsp sesame oil
- A pinch of black pepper
- 1 Tbsp toasted sesame seeds
- A little cooking oil
Cooking Instructions
Step 1
Prepare the star of today’s kimbap: 2 strips of delicious pork belly. It’s helpful to cut them into kimbap-sized pieces beforehand.
Step 2
Lightly season the pork belly with salt. Preheat your air fryer to 180°C (350°F) and cook the pork belly for about 15 minutes until golden brown. If you don’t have an air fryer, you can pan-fry it. Once cooked, slice the pork belly into bite-sized pieces.
Step 3
Wash the 2/3 carrot thoroughly and julienne it thinly. Lightly oil a pan, add the julienned carrot, 3 pinches of salt, and a pinch of pepper. Stir-fry until the carrot is tender. This brings out the carrot’s natural sweetness, enhancing the kimbap’s flavor.
Step 4
In 3 bowls of freshly cooked warm rice, add 2 pinches of fine salt, 2 Tbsp of sesame oil, and 1 Tbsp of toasted sesame seeds. Gently mix with a rice paddle. Since ssamjang will be added, it’s important to season the rice lightly. Mix softly to avoid mashing the rice grains.
Step 5
Gather all the filling ingredients for kimbap. The pickled radish rolls can be used as is. Wash the lettuce leaves under running water and pat them dry. Ssamjang can be mixed into the rice or served on the side.
Step 6
Place 2 sheets of kimbap seaweed overlapping on a bamboo rolling mat. Spread a thin layer of seasoned rice over the seaweed. Generously arrange 6 lettuce leaves on top of the rice, followed by a small amount of ssamjang. Be cautious with the ssamjang amount, as too much can make it salty; use slightly less than pictured.
Step 7
Arrange the stir-fried julienned carrots and the sliced pork belly neatly over the rice. Place the ingredients evenly to prevent them from shifting.
Step 8
Using the bamboo mat, roll the kimbap tightly and firmly, ensuring the fillings don’t fall out. Lightly dampen the edge of the seaweed with water to help it seal, creating a neat roll.
