Essential Ingredients- Pork Belly (thinly sliced) 150g
- Onion 1/2, diced
- Potato 1/2, diced
- Zucchini 1/2, diced
- Green Onion 10cm 1 stalk, diagonally sliced
- Green Chili Pepper 1, finely chopped
- Oyster Mushrooms 1 handful, trimmed and torn
- Water, as needed
Seasoning Ingredients- Doenjang (Korean soybean paste) 2 Tbsp
- Gochugaru (Korean chili flakes) 1/2 Tbsp
- Minced Garlic 1/2 Tbsp

Cooking Instructions
Step 1
Prepare the vegetables for the stew. Wash and dice the onion, potato, and zucchini into bite-sized pieces (about 1.5 cm). Finely chop the green onion diagonally and the green chili pepper. Trim the tough ends of the oyster mushrooms and tear them into manageable pieces.
Step 2
Place all the thinly sliced pork belly into a pot. Add enough water to just cover the pork belly (approximately 700ml). This step helps to extract the rich flavor from the pork, making the stew more savory.
Step 3
Bring the pot to a boil over high heat. Once the water is boiling, stir in the doenjang. For a smoother texture, you can place the doenjang in a fine-mesh sieve and rub it against the side of the pot as you stir, allowing it to dissolve evenly.
Step 4
After dissolving the doenjang, add the diced onion, potato, and minced garlic to the pot. These ingredients will add depth of flavor as they cook in the broth. Reduce the heat to medium and let the ingredients simmer until tender.
Step 5
When the potatoes are almost cooked through and tender, add the diced zucchini, sliced green onion, chopped green chili pepper, and torn oyster mushrooms. Finally, stir in the gochugaru for a touch of spice and vibrant color. Continue to simmer for about 5 more minutes until all vegetables are fully cooked.
