Main Ingredients

  • 5 pieces low-sodium pollack roe
  • 300g firm tofu (about 1 block)
  • 3 Tbsp salted shrimp (saeujeot)
  • 1 Tbsp minced garlic
  • 3 Tbsp chopped green onion
  • 1L seafood broth (or anchovy-kelp broth)
  • 1 Tbsp sesame oil

First, cut the tofu into bite-sized cubes and carefully place them into the pot. Handle the tofu gently to prevent it from breaking.

Now, let’s prepare the pollack roe. Using low-sodium pollack roe allows for a savory flavor without excessive saltiness. Add the whole pollack roe to the pot without slicing it. It’s best to cut it after it’s cooked, as slicing it beforehand can cause the roe to break apart during boiling. Add 1 Tbsp of minced garlic along with the pollack roe.

Add the generous amount of chopped green onions. We’ll be seasoning the stew using only salted shrimp. Add 3 Tbsp of salted shrimp. (Adjust the amount to your preference).

Pour in the prepared 1L of seafood broth and bring it to a rolling boil over high heat. Once boiling, reduce the heat to medium and simmer gently to allow the flavors to meld. Skim off any foam that rises to the surface during boiling with a spoon for a clearer broth. Once the pollack roe is partially cooked, gently cut it into large pieces using chopsticks or a spoon. Avoid cutting it too finely, as it might break apart like rice grains.

As the stew becomes milky and develops a deep color, taste it. If you find it’s not savory enough, add a little more salted shrimp to adjust the seasoning. Finally, drizzle in 1 Tbsp of sesame oil for a nutty aroma to complete the dish!
