Rich and Flavorful Radish Greens with Perilla Seed Powder
Here’s a recipe for a deeply savory and umami-rich radish greens dish, enhanced with nutty perilla seed powder. You can easily make this delicious side dish at home using pre-boiled radish greens available in stores. It’s a truly addictive side that pairs perfectly with rice!
Ingredients
- 400g boiled radish greens
- 2 Tbsp minced garlic
- 3 Tbsp chopped green onion (scallions)
- 1 red chili pepper (seeds removed, then minced or thinly sliced)
- 2 Tbsp soup soy sauce (guk-ganjang)
- 1 Tbsp regular soy sauce (jin-ganjang)
- 2 Tbsp perilla oil
- 4-5 Tbsp ground perilla seeds (adjust to taste)
- 2-2.5 cups anchovy broth (using a standard paper cup for measurement)
- 1 Tbsp cooking oil
Cooking Instructions
Step 1
First, let’s prepare the broth for our delicious side dish. Add water to a pot and boil the anchovy and kelp sachet for about 10 minutes to create a flavorful anchovy broth.
Step 2
Rinse the store-bought boiled radish greens thoroughly under running water multiple times. This step is crucial for removing any lingering old taste or impurities, so be sure to wash them meticulously.
Step 3
For a more tender texture, peel the outer skin from the thicker stems of the radish greens. You can do this by gently scraping it off with your hands.
Step 4
After peeling, rinse the radish greens again and squeeze out as much water as possible with both hands. If too much water remains, the dish might turn out bland.
Step 5
Cut the squeezed radish greens into bite-sized pieces (about 3-4cm in length). Finely mince or thinly slice the red chili pepper (after removing seeds) to add color. Also, finely chop the green onions.
Step 6
Place the cut radish greens into a bowl. Add the seasoning ingredients: 1 Tbsp regular soy sauce, 2 Tbsp soup soy sauce, 2 Tbsp perilla oil, and 2 Tbsp minced garlic.
Step 7
Gently mix the ingredients into the radish greens by massaging them with your hands until well combined. Let it marinate for about 15-20 minutes to allow the flavors to meld. This marinating step significantly enhances the taste.
Step 8
Heat 1 Tbsp of cooking oil in a pan over medium-low heat. Add the marinated radish greens and sauté for about 3 minutes. Stir-frying them like this helps to bring out their savory aroma.
Step 9
Pour in 2 to 2.5 cups of the prepared anchovy broth. The liquid should generously coat the greens.

Once the broth comes to a boil, reduce the heat to low, cover the pan, and simmer gently for about 15 minutes. (I simmered mine for 15-20 minutes for extra tenderness.)

Remove the lid and, once the liquid has reduced slightly, add 4-5 Tbsp of ground perilla seeds and the chopped green onions. Stir well to combine. Cook for another 1-2 minutes, stirring until the perilla seeds are dissolved.
Step 12
Just before turning off the heat, drizzle a little more perilla oil. This will enhance the nutty aroma and add an extra layer of flavor. It’s optional, but highly recommended!
