Savory Perilla Oil Stir-fried Dried Radish Greens

Even aged dried radish greens turn wonderfully tender! This delicious stir-fry eliminates the musty smell typical of old greens with the aromatic touch of perilla oil, its nutty fragrance stimulating your appetite. Enhanced with the savory saltiness of soy sauce for seasoned dishes, this is a side dish that will have you finishing a bowl of rice in no time.
Main Ingredients- 250g boiled and peeled dried radish greens
- 1 Tbsp grapeseed oil
- 1 tsp perilla oil
- 5 Tbsp kelp broth
Seasoning- 1.2 Tbsp soy sauce for soup (guk-ganjang)
- 2/3 Tbsp minced garlic
- 1/2 Tbsp perilla oil
- 1/2 Tbsp toasted sesame seeds
- 1/4 Tbsp sugar
- 1.5 Tbsp chopped white parts of scallion
- 1.2 Tbsp soy sauce for soup (guk-ganjang)
- 2/3 Tbsp minced garlic
- 1/2 Tbsp perilla oil
- 1/2 Tbsp toasted sesame seeds
- 1/4 Tbsp sugar
- 1.5 Tbsp chopped white parts of scallion
Cooking Instructions
Step 1
First, carefully peel away the tough outer skin from the boiled and prepared dried radish greens. This step is crucial for achieving a tender texture.
Step 2
Cut the peeled radish greens into bite-sized pieces, about 6-7 cm long. Cutting them too long can make them difficult to stir-fry.
Step 3
Now, let’s make the delicious seasoning. Combine all the ingredients listed under ‘Seasoning’ and mix them well.

Add the cut radish greens to the prepared seasoning mix. Gently but firmly rub the greens with your hands, ensuring the seasoning coats every strand evenly. Thoroughly massaging the greens helps them absorb the flavors.

After marinating the radish greens, you’ll notice some unabsorbed seasoning liquid at the bottom of the bowl. Don’t discard this! Adding it to the pan during stir-frying will add a deeper flavor.
Step 6
Heat 1 Tbsp of grapeseed oil and 1 tsp of perilla oil in a wide pan. Add the marinated radish greens along with the reserved seasoning liquid. Stir-fry over high heat for about 1 minute to evaporate some of the moisture. This helps to eliminate any raw or musty odors and enhances the aroma.
Step 7
Once most of the moisture has evaporated, pour in the 5 Tbsp of kelp broth. Reduce the heat to medium and continue to stir-fry for another 4 minutes, uncovered, until the greens are tender and flavorful. Your delicious stir-fried radish greens are almost ready!
Step 8
Finally, taste the dish. If the radish greens still feel a bit tough, add another 1-2 Tbsp of kelp broth, cover the pan, and simmer over very low heat until they become soft and moist. This final simmer ensures the greens are perfectly tender and succulent.
