Ingredients

  • 50g fresh Crown Daisy (select fragrant leaves and tender stems)
  • 7 Perilla leaves (washed thoroughly)
  • 1/5 Onion (thinly sliced into matchsticks)
  • 1 Red chili pepper (seeds removed, thinly sliced into matchsticks)
  • 10g Dried shrimp (feel free to add more to your liking)
  • 1 cup Pancake mix (using a standard paper cup)
  • 1.3 cups Water (using a standard paper cup)

Cooking Instructions

Step 1

First, wash the crown daisy and perilla leaves under running water. Trim any tough parts of the crown daisy stems and chop the leaves and stems into bite-sized pieces (about 1.5-2 inches). For the perilla leaves, roll them up and slice them thinly into fine shreds.

Peel the onion, rinse it, and then thinly slice it into matchstick-like strips. Remove the stem and seeds from the red chili pepper, then slice it thinly into matchsticks as well. This adds a lovely color to the pancake.

In a large bowl, combine 1 cup of pancake mix with 1.3 cups of water. Whisk until smooth, ensuring there are no lumps. The batter should be thick enough to hold the ingredients without being too runny. Now, add the prepared crown daisy, perilla leaves, sliced onion, red chili pepper, and dried shrimp to the batter. Gently mix everything together with a spoon or spatula until well combined. Your delicious pancake batter is ready!

Heat a frying pan over medium heat and generously add cooking oil. Once the oil is hot, spoon portions of the batter onto the pan, spreading them out thinly into your desired pancake size. Cook over medium heat until one side is golden brown and crispy, then carefully flip and cook the other side until it’s also beautifully golden. Adjust the heat as needed to prevent burning.

Once the crown daisy pancakes are nicely cooked, place them on a paper towel briefly to drain any excess oil. Cut them into serving pieces and arrange them on a plate. For an extra burst of flavor, serve with a dipping sauce made from 2 tbsp soy sauce, 1 tbsp vinegar, a pinch of red pepper flakes, a little sugar, and some sesame seeds.
