  • Ingredient Category : Mushrooms
  • Occasion : Everyday
  • Cooking : Braise
  • Servings : 4 servings
  • Cooking Time : Within 30 minutes
  • Difficulty : Beginner

Main Ingredients

  • 3 King Oyster Mushrooms

Seasoning

  • 3 Tbsp Water
  • 1.5 Tbsp Soy Sauce
  • 1 Tbsp Oligosaccharide (or corn syrup/honey)

Cooking Instructions

Step 1

First, gently wipe any dirt or impurities off the King Oyster Mushrooms using a damp paper towel. Trim off the tough ends of the mushrooms. Then, slice them into approximately 2cm thick rounds.

Step 1

Step 2

On the sliced mushroom rounds, make thin, crosshatch scores on both sides. Be careful not to cut too deep, as this can cause the mushrooms to fall apart. These scores will help the mushrooms absorb the glaze beautifully.

Step 2

Step 3

Heat a non-stick skillet over medium-low heat without any oil. Place the scored mushrooms in the pan and sear them until golden brown on both sides. Since mushrooms release their own moisture, this dry-searing method helps to develop a pleasant, chewy texture.

Step 3

Step 4

As moisture begins to release from the mushrooms, gently push the seared mushrooms to one side of the skillet. This will create space to add the glaze.

Step 4

Step 5

In the empty space on the skillet, carefully pour in the 3 Tbsp of water and 1.5 Tbsp of soy sauce. Once the mixture starts to bubble, add the 1 Tbsp of oligosaccharide for sweetness and shine, and stir gently.

Step 5

Step 6

Now, spread the mushrooms back into the glazed area. Reduce the heat to low and let the mushrooms simmer uncovered, allowing the soy glaze to coat and soak into them. Continue to simmer and flip the mushrooms occasionally until the sauce has slightly thickened and coats the mushrooms well. Your delicious King Oyster Mushroom Soy Glaze is ready to be served with rice!
