Main Ingredients
  • 200g frozen boneless cod fillets
  • 2 eggs
  • 3 Tbsp pancake mix (buchim garu)
  • Pinch of salt
  • Pinch of black pepper
  • Generous amount of cooking oil
  • 1 Tbsp chopped green onions (optional, for garnish)

Cooking Instructions

Step 1

Begin by preparing 200g of frozen boneless cod fillets. If they are still partially frozen, you can briefly soak them in cold water to thaw.

Step 2

Gently season the thawed cod fillets with a pinch of salt and a dash of black pepper. Rub them gently to distribute the seasoning. Let them sit for about 20 minutes to allow the flavors to penetrate the fish. This step is crucial for removing any fishy odor and enhancing the overall taste.

Step 3

In a bowl, crack 2 eggs and whisk them well with 2 pinches of salt and a sprinkle of black pepper. On a separate flat plate, spread out 3 tablespoons of pancake mix.

Step 4

Lightly coat each seasoned cod fillet with the pancake mix, ensuring both sides are evenly covered. Gently shake off any excess flour. This coating helps the egg batter adhere better.

Step 5

Heat a generous amount of cooking oil in a frying pan over medium-low heat. Carefully place the flour-coated cod fillets into the hot pan, then generously coat them with the beaten egg mixture. Cooking over medium-low heat ensures the cod cooks through evenly without burning.

Step 6

Once the cod starts to set and turn golden on one side, sprinkle some finely chopped green onions around the edges of the pan for added aroma and flavor. Alternatively, you can add finely chopped chili peppers for a touch of heat and color. (Optional)

Step 7

Flip the cod fillets carefully and cook the other side until it’s also golden brown and crispy. Ensure the cod is cooked through to the center; you might need to adjust the heat slightly to prevent burning. Cook until both sides are a beautiful golden brown.

Step 8

Once perfectly pan-fried, transfer the Daegu-jeon to a wire rack lined with paper towels to drain off any excess oil. This will make the dish lighter and more enjoyable.

Step 9

Your delicious and savory pan-fried cod (Daegu-jeon) is ready! Serve immediately while warm, or with a side of soy-based dipping sauce. It’s a wonderful addition to any festive meal.
