Cooking Instructions
Step 1
Thaw the frozen cooked octopus tentacles at room temperature until they are soft enough to be easily cut with a knife. Proper thawing is key for easy preparation.
Step 2
You can leave the octopus skin on, but if you prefer a less chewy texture, gently pull and peel off the skin.
Step 3
Slice the thawed octopus tentacles into pieces about 0.3cm thick. If you enjoy a bit of heat, finely chop 1-2 Cheongyang peppers at this stage.
Step 4
In a wide pan, combine sugar, gochugaru, minced garlic, soy sauce, cooking wine, oyster sauce, and water. Bring to a boil over medium heat. (For a cleaner flavor, you can omit the minced garlic and add 5 thinly sliced whole garlic cloves instead.)
Step 5
Once the seasoning mixture bubbles up in the center of the pan, reduce the heat slightly and let it simmer for about 3 more minutes to deepen the flavors. Then, add the sliced octopus and mix well.
Step 6
After adding the octopus, continue to stir-fry over medium heat, allowing the sauce to reduce and the flavors to meld into the octopus. Cook until most of the liquid has evaporated.
Step 7
Just before turning off the heat, drizzle in 1 tablespoon of sesame oil, sprinkle with freshly ground black pepper, and finish with a scattering of toasted sesame seeds for a delightful oyster sauce stir-fried octopus.
Step 8
Let the stir-fried octopus cool slightly. It becomes even chewier and more delicious as it cools. Although it contains gochugaru, the spiciness is very mild, making it a hit with children!
Step 9
This glossy and appetizing oyster sauce stir-fried octopus is fantastic served over a bowl of freshly steamed rice. Enjoy this wonderful dish!
