  • 20 stalks of chives

  • 2 Tbsp soy sauce
  • 2 Tbsp vinegar
  • 2 Tbsp sugar
  • 2 Tbsp water
  • 1/2 Tbsp mustard (e.g., Korean mustard or whole grain mustard)

Cooking Instructions

First, peel and thoroughly wash the onion. Slice it thinly into julienne strips. Wash the chives and cut them into manageable lengths of about 4-5 cm.

To reduce the pungent flavor of the onion and enhance its crispness, soak the julienned onion in cold water for about 10 minutes. This step makes the onion milder and wonderfully crunchy. After soaking, drain the water completely using a colander.

While the onion is soaking, let’s prepare the sauce. In a small bowl or a sauce container, combine 2 Tbsp soy sauce, 2 Tbsp vinegar, 2 Tbsp sugar, 2 Tbsp water, and 1/2 Tbsp mustard. If you use a container with a lid, simply shake it vigorously to thoroughly mix the mustard and create a smooth, flavorful sauce.

Add the drained julienned onion and the prepared chives to a large mixing bowl. Pour the prepared onion soy sauce over them. Gently toss everything together to ensure the onions and chives are evenly coated with the sauce.
