Main Ingredients
  • Dried kelp (Kombu) 10g (approx. 5x5cm)
  • Hot water 400ml
  • Boiled quail eggs 200g
  • Daikon radish (Mu) 200g, cut into cubes
  • Garlic cloves 5, thinly sliced or whole
  • Soy sauce 6 Tbsp
  • Sugar 1 Tbsp
  • Mirin (rice wine) 2 Tbsp
  • Corn syrup (or rice syrup) 1.5 Tbsp

Cooking Instructions

Step 1

First, prepare the dried kelp. Gently wipe the surface of the kelp with a clean kitchen towel to remove any white powder. This helps reduce bitterness. (Do not wash the kelp!)

Step 2

Place the prepared kelp in a pot or deep bowl. Pour in 400ml of hot water and let it steep for about 10-15 minutes to create a rich and flavorful kelp broth. (Alternatively, you can use anchovy broth.)

Get your boiled quail eggs ready. Peel them and give them a quick rinse under cold water.

Step 4

Cut the daikon radish into bite-sized cubes, approximately 1.5cm each. This size is easy to eat, especially for children.

Now, let’s make the braising liquid. In the pot, combine the cubed daikon radish, sliced garlic, the prepared kelp broth, soy sauce, sugar, mirin, and corn syrup. Give it a gentle stir to mix all the ingredients.

Bring the mixture to a boil over medium-high heat. Once it starts bubbling, reduce the heat to medium-low. Carefully add the peeled quail eggs to the pot. Cover the pot or leave it uncovered, and let it simmer for about 15-20 minutes, allowing the liquid to reduce and the flavors to meld into the ingredients. Stir occasionally to prevent the quail eggs from sticking or burning. Cook until the sauce reaches your desired consistency. Your delicious glazed quail eggs are ready!
