Nurungji and Egg Porridge Ingredients

  • 1/2 bag Nurungji (toasted rice crust)
  • 1L Water
  • 2 Eggs
  • 2 Tbsp Yeondu (Korean soy sauce alternative) or light soy sauce
  • 2 Tbsp Chicken stock
  • A little chopped green onion
  • 2 Tbsp Sesame oil
  • A little sesame seeds

Cooking Instructions

Step 1

Place half a bag of Nurungji (toasted rice crust) into a pot. This is the star ingredient for our savory porridge.

Add 1 liter of water to the pot. The ideal ratio is about 1 part Nurungji to 3 parts water. Ensure the Nurungji is fully submerged.

Cover the pot and bring it to a boil over high heat. Cooking with the lid on helps the water boil faster, softening the Nurungji more quickly and reducing cooking time. Once boiling, reduce the heat to medium-low.

Let the Nurungji simmer and soften until it starts to break down and thicken the water. Stir occasionally with a spoon to prevent sticking.

While the Nurungji is cooking, crack two eggs into a separate bowl. Whisk them gently until the yolks and whites are combined. You don’t need to overbeat them.

Stir in 2 tablespoons of Yeondu (a savory Korean seasoning) or light soy sauce to season the porridge. Yeondu adds a subtle depth of flavor. Taste and adjust the seasoning as needed.

Add 2 tablespoons of chicken stock for an extra boost of savory flavor. You can also use anchovy or vegetable broth if preferred.
