  • Miso Paste: 1 Tbsp
  • Minced Garlic: 1/2 Tbsp
  • Sesame Oil: 1 Tbsp
  • Gochugaru (Korean Chili Flakes): 1/2 Tbsp (optional, for a touch of heat)
  • Toasted Sesame Seeds: For garnish

Cooking Instructions

Prepare the fresh Napa cabbage. Wash it thoroughly. Bring a pot of water to a boil and add a pinch of salt. Gently blanch the cabbage, starting with the thicker stem parts, for about 30 seconds to 1 minute, just until it wilts slightly. Be careful not to overcook it, as you want to retain some crispness. Immediately transfer the blanched cabbage to cold water to stop the cooking process. Once cooled, squeeze out as much water as possible by hand. This step is crucial for preventing the salad from becoming watery and ensuring a better texture.

Cut the squeezed cabbage into bite-sized pieces. Aim for pieces about 3-4 cm long. Cutting them too thinly might reduce the satisfying chewiness, so maintaining a moderate size is recommended.

Place the cut cabbage in a mixing bowl. Add the dressing ingredients: 1 Tbsp of miso paste, 1/2 Tbsp of minced garlic, 1 Tbsp of sesame oil, and 1/2 Tbsp of gochugaru (if using for a little spice). Make sure to add all the measured seasoning ingredients into the bowl.

Gently toss and mix the cabbage with the seasonings using your hands. Be tender to avoid mashing the cabbage; a gentle mixing motion is best. Finally, sprinkle some toasted sesame seeds on top for an extra nutty aroma and flavor. Your delicious Napa cabbage salad is now ready to be served in a nice bowl.
