Essential Ingredients
  • 1 bowl of cooked rice
  • 2 pieces of mentaiko (spicy cod roe)
  • 1 stalk of green onion
  • 2 eggs
  • 1/2 Tbsp minced garlic
  • A little sesame oil
  • A little salt
  • A little black pepper
  • Vegetable oil, as needed

Optional Ingredients (for extra flavor!)
  • 2 stalks of chopped chives
  • Shredded seaweed (gim), as needed

Cooking Instructions

Step 1

First, prepare the mentaiko. Carefully slice open the mentaiko with the back of a knife and gently scrape out the roe with the knife’s edge, discarding the membrane. You want just the delicious roe itself.

Step 2

Wash the green onion thoroughly. Finely chop both the white and green parts. The chopped green onion will add a wonderful fragrance to your fried rice.

Step 3

In a bowl, crack the 2 eggs. Add a small pinch of salt. Whisk the eggs well with a fork or whisk until no streaks remain. Be mindful that mentaiko is already salty, so adjust the salt to your preference.

Step 4

Heat a frying pan over medium-low heat and add a generous amount of vegetable oil. Add the minced garlic and chopped green onion. Sauté until fragrant, being careful not to burn them. Cooking the aromatics first will significantly enhance the flavor of your fried rice.

Step 5

Once the aromatic oil is ready, pour in the whisked eggs. Use chopsticks to quickly scramble the eggs until they are softly cooked. Once the eggs are just set, add the cooked rice, prepared mentaiko roe, black pepper, and sesame oil. Stir-fry gently, breaking up any clumps of rice, until everything is well combined and the rice is fluffy. The key is to achieve a light and fluffy texture for the rice.

Step 6
