When you’re short on special side dishes, a jar of marinated shrimp (Saeu Jang) will have you finishing a bowl of rice in no time! It’s also a fantastic dish for guests.
Main Ingredients- 50 frozen cooked shrimp (thawed)
- 1 lemon (sliced)

- 1/2 cup mirin or cooking sake
- 1 Tbsp sugar
- 5 cloves garlic (thinly sliced)
- 1/2 medium onion (cut into large pieces)
- 2 dried red chilies or peppercorns (adjust to taste)

Cooking Instructions
Step 1
We use frozen shrimp for this recipe. Freezing shrimp at -10°C (14°F) for over 24 hours is said to kill any potential parasites, making them safe and convenient to use.
Step 2
To prepare clean and easy-to-eat marinated shrimp, remove the heads, tails, and legs. We will only use the plump bodies.
Step 3
Using a toothpick, gently pierce the second segment on the shrimp’s back and remove the dark digestive tract. This ensures a clean flavor without any unpleasant taste.

In a pot, combine all the marinade sauce ingredients: soy sauce, water, mirin, sugar, sliced garlic, large onion pieces, and dried chilies. Bring to a boil over high heat. Once boiling, reduce the heat to medium-low and simmer for about 10 minutes to allow the flavors to meld. After simmering, let the sauce cool completely. Strain the sauce through a sieve to remove the solids (garlic, onion, chilies), keeping only the clear marinade. Pour this clear marinade over the prepared shrimp.

Place lemon slices on top of the shrimp to help keep them submerged in the marinade. Transfer to an airtight container and refrigerate for at least 3 days. Your delicious marinated shrimp will be ready to enjoy!

The marinated shrimp are at their most delicious about 3 days after marinating. This is when the shrimp meat has fully absorbed the savory flavors of the marinade.
