This is a hearty and flavorful dish of salted mackerel simmered with generous chunks of daikon radish. Even picky eaters, like my son, enjoy this delightful stew. It’s a comforting meal that’s perfect for any occasion.

Main Ingredients

  • 3 salted mackerel fillets
  • 1/2 daikon radish (approx. 300g)
  • 1 onion
  • 1 green onion

Braising Sauce

  • 6 Tbsp soy sauce
  • 1.5 Tbsp minced garlic
  • 2-3 Tbsp gochugaru (Korean chili flakes, adjust to taste)
  • 0.5 tsp ginger powder
  • 2 Tbsp cooking wine or mirin
  • 3 Tbsp oligosaccharide (adjust sweetness)
  • 1 Tbsp sugar (adjust sweetness)
  • A pinch of black pepper

Cooking Instructions

Peel the daikon radish and cut it into thick, bite-sized pieces, about 2-3 cm thick. Arrange the radish pieces at the bottom of a pot. Lightly rinse the salted mackerel under running water. Make a few shallow cuts on the flesh of the mackerel. These cuts help the sauce penetrate better and ensure even cooking. Place the cut mackerel pieces on top of the radish.

Peel the onion and cut it into quarters. Cut the green onion into large diagonal pieces. Cutting them into larger pieces will help them maintain their texture and shape during cooking.

Arrange the cut onion and green onion evenly over the mackerel. Pour 2 cups (about 400ml) of water into the pot, pouring gently along the sides. This amount of water should be enough to lightly cover the ingredients.

Now, let’s prepare the delicious braising sauce. In a bowl, combine the soy sauce, minced garlic, gochugaru, ginger powder, cooking wine (or mirin), oligosaccharide, sugar, and black pepper. Mix all ingredients thoroughly to create the sauce. Feel free to adjust the amount of sugar and chili flakes to suit your preference for sweetness and spiciness.

Pour the prepared sauce evenly over the mackerel, radish, and vegetables in the pot. Ensure the sauce coats everything nicely. Place the pot over high heat and bring to a boil. Once boiling, reduce the heat to medium-low. Periodically, ladle some of the braising liquid from the pot and spoon it over the mackerel and radish. This prevents the sauce from burning and adds a glossy finish and enhanced flavor to the ingredients.

Continue to braise over medium-low heat for about 25-30 minutes, or until the radish becomes tender and translucent and the sauce has thickened slightly. For the best flavor infusion, you can start with high heat for the first 15-20 minutes, then reduce to medium-low for the remaining 10 minutes. This slow simmering allows the flavors to penetrate deeply into the ingredients. Taste the sauce midway and adjust seasoning if needed by adding more soy sauce or sugar.
