How to Make a Delicious Lamb Over Rice Bowl Using Lamb Cubes (Perfectly Paired with Garlic Rice)
We’ve transformed lamb cubes, typically used for skewers, into an incredibly delicious rice bowl! It’s unique and wonderfully tasty, especially when paired with garlic rice. This recipe offers a creative way to enjoy lamb cubes in a delightful bowl format.
Main Ingredients- Lamb cubes 300-500g
- 1/2 Onion
- 144g Cabbage
- 3 Tbsp Soy Sauce
- 1 Tbsp Mirin (cooking sake)
- 1 Tbsp Oligosaccharide (or honey/corn syrup)
- A pinch of Black Pepper
- Some Scallions
- Herbs and Salt to taste
- 1-2 Tbsp Olive Oil
- Cumin powder (optional)
- Lamb seasoning (optional)
Garlic Rice Ingredients- 1.5 cups Rice
- 1 Tbsp Minced Garlic
- 1.5 cups Rice
- 1 Tbsp Minced Garlic
Cooking Instructions
Step 1
First, prepare the rice for the bowl. Rinse 1.5 cups of rice (using a standard paper cup measurement) thoroughly. Soak the rinsed rice in water for about 30 minutes; this will help the rice cook up fluffy and delicious.

Prepare the minced garlic that will add wonderful flavor to the rice. If you are using frozen minced garlic, it’s important to pat it dry with a paper towel to remove excess moisture. This prevents the oil from splattering when you fry it. Prepare 1 tablespoon of drained minced garlic.

Heat 1-2 tablespoons of olive oil in a preheated frying pan over low heat. Add the prepared minced garlic and fry it gently until it turns a golden brown color. Be careful not to burn the garlic. Once the garlic is nicely browned, carefully remove it from the pan and place it on a paper towel for a moment to drain any excess oil. This process creates crispy, fragrant garlic chips that enhance the rice’s flavor without making it greasy.

Combine the soaked rice with the fried garlic in your rice cooker. Add the usual amount of water for cooking 1.5 cups of rice and start the cooking cycle.

Step 7
Prepare the vegetables. Thinly slice the onion after peeling it. Cut the cabbage into bite-sized pieces.

Let’s make the special sauce that will tie all the flavors together. In a small bowl, combine 3 tablespoons of soy sauce, 1 tablespoon of oligosaccharide (or honey/corn syrup), and 1 tablespoon of mirin. Whisk well until combined. This creates a perfectly balanced sweet and savory sauce.

To cook the lamb perfectly, we’ll use an air fryer. Preheat your air fryer to 180°C (350°F) for 5 minutes. Place the seasoned lamb cubes in the preheated air fryer and cook for 10 minutes at 180°C. After 10 minutes, carefully flip the lamb cubes and cook for an additional 10 minutes. This two-stage cooking ensures the lamb is tender on the inside and slightly browned on the outside.

Once the lamb is cooked, remove it from the air fryer and let it rest for a moment to allow the juices to redistribute. Carefully drain any excess oil that has accumulated at the bottom of the air fryer basket or a separate pan. This step ensures the final dish is not greasy.

While the lamb is cooking, stir-fry the vegetables. Lightly grease a frying pan with olive oil and add the sliced onions. Sauté until they become translucent and start to turn golden brown. Then, add the chopped cabbage and continue to stir-fry until the cabbage is slightly softened.
