Cooking Instructions
Step 1
First, prepare the King Oyster Mushrooms, named for their ‘meaty’ flavor and unique texture. They offer a wonderful chewy bite.
Step 2
Lightly rinse the King Oyster Mushrooms under running water to remove any debris. Then, blanch them in boiling water for about 10 seconds – just a quick dip! Overcooking can make them mushy, so be brief.
Step 3
Drain the blanched mushrooms and rinse them under cold water. Squeeze out as much water as possible with your hands. Properly draining is key to a non-soggy stir-fry.
Step 4
Roughly chop the squeezed mushrooms into bite-sized pieces and place them in a pan. Avoid chopping too finely; you want a pleasant chew.
Step 5
Add the stir-fry seasoning ingredients directly to the pan with the mushrooms: 1 Tbsp Soy Sauce, 2 Tbsp Gochujang, 1/2 Tbsp Minced Garlic, 1 Tbsp Gochugaru, and 2 Tbsp Oligodang. A little cooking oil, like canola oil, can help prevent sticking and add shine.
Step 6
Stir-fry over medium heat, ensuring the seasoning coats the mushrooms evenly. Cook for about 2-3 minutes, stirring occasionally to prevent burning.
Step 7
Finally, stir in 1 Tbsp Sesame Oil and a sprinkle of Toasted Sesame Seeds, and give it one last quick stir. Your delicious King Oyster Mushroom stir-fry is ready! For maximum aroma, you can add sesame oil after turning off the heat.
Step 8
In a large bowl, combine the warm rice with the rice mixing ingredients: 1 Tbsp Sesame Oil, 3 pinches Seasoned Salt, and a sprinkle of Toasted Sesame Seeds. Seasoned salt adds extra umami! Gently mix with a spatula, being careful not to mash the rice grains.
Step 9
Wash the fresh Perilla Leaves thoroughly. Their aromatic scent complements the rice balls beautifully. You can lightly blanch them in boiling water for a few seconds, then rinse in cold water and pat dry. (This step is optional but makes them softer and easier to wrap).
Step 10
Lay a Perilla Leaf flat and place 1-2 tablespoons of the prepared King Oyster Mushroom stir-fry in the center. The savory sauce will infuse into the rice, adding a wonderful depth of flavor.
Step 11
Scoop a portion of the seasoned rice onto the mushrooms and then wrap the Perilla Leaf around the rice to form a compact, round ball. The combination of the fresh perilla and the savory mushrooms is simply delightful.
Step 12
And there you have it – your exquisite King Oyster Mushroom & Perilla Leaf Rice Balls are complete! Each bite offers a burst of complex flavors and aromas.
Step 13
