How to Make Ham and Potato Stir-Fry Without It Falling Apart!

Main Ingredients- 3 medium potatoes
- 200g ham
- 30g carrot

Cooking Instructions
Step 1
First, prepare 3 medium-sized potatoes. Wash them thoroughly and peel them using a vegetable peeler. It’s important to ensure no dirt or residue remains after peeling.
Step 2
Cut the peeled potatoes into strips for stir-frying. I’ve cut mine a bit thicker, but you can slice them thinner if you prefer. Aim for uniform thickness to ensure even cooking. Thicker strips will help prevent them from breaking apart during cooking.
Step 3
Bring a pot of water to a rolling boil. Once boiling, add the potato strips and blanch them for about 1 minute. This step is crucial for preventing the potatoes from breaking apart later and will significantly shorten the stir-frying time to around 5 minutes. After blanching, drain the potatoes in a colander but do not rinse them with cold water. Let them drain thoroughly.
Step 4
While the potatoes are blanching, prepare the ham and carrot by cutting them into strips similar in thickness to the potatoes. Using canned ham is convenient, and carrots add a lovely color to the dish, making it more appealing.
Step 5
Now, let’s stir-fry! Heat 2 tablespoons of cooking oil in a frying pan over medium-low heat. Add 1 tablespoon of minced garlic and sauté until fragrant, being careful not to burn the garlic. This aromatic base is key to the flavor.
Step 6
Once the garlic is fragrant, add the drained potatoes, ham strips, and carrot strips to the pan. Add 1/2 tablespoon of salt. When the potatoes are still firm, stir everything together gently. Avoid stirring too frequently at this stage to prevent the potatoes from breaking. Stir occasionally to ensure even cooking and to prevent sticking.
Step 7
Taste the dish as the potatoes become tender and translucent. If needed, add a little more salt to adjust the seasoning to your preference. Finally, season with a pinch of black pepper and sprinkle with sesame seeds. Give it a final mix, and your delicious Ham and Potato Stir-Fry is ready to be served!
