- 3 eggplants
- Plenty of cooking oil
- A little green onion or scallion
Seasoning Sauce
- 2 Tbsp soy sauce
- 1/2 Tbsp oligosaccharide
- 1 Tbsp gochugaru (Korean chili flakes)
- 1/5 Tbsp minced garlic
- 1/3 Tbsp sesame oil
- 1 Tbsp water
- 2 Tbsp soy sauce

Cooking Instructions
Step 1
First, prepare 3 fresh eggplants. Wash them thoroughly under running water and then cut them into roughly 3 equal pieces.
Step 2
Now, cut each of these 3 pieces in half lengthwise. This will create pieces that are easy to pan-fry.

On the cut side of the eggplant, make shallow diagonal scores, crossing each other, just deep enough that a chopstick can reach. This helps the sauce penetrate deeply and makes the eggplant even more flavorful.

Now, preheat a pan and add a generous amount of cooking oil. Once the oil is sufficiently hot, place the scored eggplant pieces cut-side down. Cook over medium heat until golden brown.

Once the cut side of the eggplant is nicely browned, carefully flip the pieces over and cook the other sides until they are evenly browned. The key is to cook until the exterior is slightly crispy.
