  • 600g chicken thigh (with skin)
  • A pinch of coarse salt
  • A pinch of whole black pepper

  • Plenty of scallions (for grilling)

  • 2 Tbsp cooking oil
  • 1 Tbsp chili powder

Zesty Kick: Wasabi Mayo Sauce

  • 3 Tbsp mayonnaise
  • 1/3 Tbsp wasabi (adjust to taste)
  • 1 Tbsp sugar
  • 1 Tbsp vinegar
  • 1 pinch of salt
  • 1/3 Tbsp minced garlic

First, prepare 600g of chicken thigh. Season the chicken thigh generously with coarse salt and whole black pepper. Let it marinate in the refrigerator for about 30 minutes. This allows the seasoning to penetrate deeply, making the chicken even more flavorful.

While the chicken is marinating, let’s make some delicious chili oil. Heat 2 tablespoons of cooking oil in a pan over medium-low heat. Add a small amount of finely chopped scallions (for infusing aroma) and simmer gently.

Once you can smell the gentle aroma from the scallions, and they start to develop tiny bubbles and show a slightly brownish edge, turn off the heat. It’s important to prevent the scallions from burning.

From the pan with the heat turned off, carefully pour the hot oil over 1 tablespoon of chili powder that you’ve placed in a separate bowl. This process quickly creates a fragrant and spicy chili oil.

Stir well until all ingredients are thoroughly combined. This creates a creamy and zesty wasabi mayo sauce.
