Gondre Rice Ingredients- 100g dried gondre (Korean thistle leaves)
- 3 cups rice (approx. 540g)
- 2 Tbsp sesame oil (for cooking rice)
Aromatic Dill Sauce Ingredients- 1/2 bunch fresh dill (approx. 50g)
- 2 Tbsp gochugaru (Korean chili flakes, adjust to taste)
- 4 Tbsp guk-ganjang (Korean soup soy sauce)
- 6 Tbsp jin-ganjang (Korean soy sauce)
- 2 Tbsp sesame oil
- 2 Tbsp toasted sesame seeds (for added nuttiness)
- 2 tsp minced garlic
- 1/2 bunch fresh dill (approx. 50g)
- 2 Tbsp gochugaru (Korean chili flakes, adjust to taste)
- 4 Tbsp guk-ganjang (Korean soup soy sauce)
- 6 Tbsp jin-ganjang (Korean soy sauce)
- 2 Tbsp sesame oil
- 2 Tbsp toasted sesame seeds (for added nuttiness)
- 2 tsp minced garlic
Cooking Instructions
Step 1
Begin by preparing the dried gondre. Soak the gondre in warm water for 3-4 hours until it becomes tender. Soaking for longer will make it softer. It’s recommended to change the water halfway through.

You’ll know the gondre is sufficiently soaked when its leaves unfurl and soften. Avoid soaking for too long, as it might lose its flavor.

Place the soaked gondre into the same water it was soaked in and boil for about 20 minutes. This process helps to mellow out any bitterness in the gondre. After boiling, rinse thoroughly under cold running water.

Squeeze out excess water from the rinsed gondre leaves firmly by hand. Excess moisture can make the rice mushy, so ensure it’s well-drained.

Chop the drained gondre into bite-sized pieces, about 2-3 cm in length. Cutting them into manageable pieces will ensure a pleasant texture when mixed with the rice.

In a bowl, combine the chopped gondre with 2 tablespoons of sesame oil and gently mix them together. You can substitute sesame oil with perilla oil for an even richer aroma. This step helps to infuse the gondre’s flavor.

Place the seasoned gondre evenly over the washed rice in your rice cooker. Cook using the regular white rice setting. The gentle aroma of the gondre will subtly infuse the rice as it cooks.

Once the cooking is complete, gently fluff the rice with a spatula, ensuring the gondre is well distributed. Let it steam for another 5-10 minutes, covered, to allow the flavors to meld further.

Now, let’s prepare the dill sauce to enhance the gondre rice. Finely chop the fresh dill after washing and trimming the root ends. Add 2 teaspoons of minced garlic to the chopped dill.
Step 10
To the finely chopped dill and minced garlic, add 2 tablespoons of gochugaru, 4 tablespoons of jin-ganjang, 6 tablespoons of guk-ganjang, 2 tablespoons of toasted sesame seeds, 2 tablespoons of sesame oil, and 3 tablespoons of water.
