  • 3 fresh eggs

  • 4 sheets of seasoned seaweed (gim)
  • 2 pinches of salt
  • Cooking oil (for frying)

First, wash about a handful of fresh green onions, pat them dry, and finely chop them into about 0.5cm pieces. This will add a fragrant flavor.

Crack 3 fresh eggs into a bowl. Add 2 pinches of salt to enhance the flavor. Use chopsticks or a whisk to break the egg yolks and blend until the whites and yolks are well combined and smooth.

Add the pre-chopped green onions to the beaten egg mixture. Gently mix with a spoon, ensuring the fragrant aroma of the green onions is evenly distributed throughout the egg mixture.

Pour a generous amount of cooking oil into the frying pan. If there isn’t enough oil, the egg can stick and ruin the shape, so be sure to use plenty. Heat the pan over medium-high heat for a moment, then reduce the heat to medium to ensure the egg cooks gently without burning.

Pour the prepared egg mixture into the heated pan. Cook slowly over medium heat. Wait until the bottom layer is cooked, but the top layer is still moist and slightly unset. Be careful, as high heat will cause the egg to cook too quickly and make it difficult to handle.
