This is a Chinese-style fried rice made with dark soy sauce, regular soy sauce, black pepper, scallions, and garlic. You can omit the dark soy sauce if you don’t have it, but please note that the color and flavor might change slightly. It’s a wonderfully fluffy and flavorful fried rice with just the right amount of seasoning, perfect for those who love a soy sauce base.   • 1 large egg
  • 1 bowl of cooked rice
  • 2 cloves garlic
  • 1/4 stalk scallion

Cooking Instructions

Step 1

First, prepare the aromatics that will add depth of flavor to your fried rice. Finely mince the 1/4 stalk of scallion and the 2 cloves of garlic. Mincing them beforehand will help release their fragrance more effectively when sautéed.

Step 2

Now, heat your pan over medium-low heat. Add a generous amount of vegetable oil, then add the minced scallions and garlic. Sauté them gently, being careful not to burn them, until they become fragrant. Add the 1/4 Tbsp of sugar and continue to stir-fry with the vegetables; this will enhance their sweetness and create a more delicious aroma.

Step 3

Once the garlic and scallions are lightly golden and their aroma is noticeable, it’s time to add the rice. Sprinkle in a pinch of black pepper. Add the 2/3 Tbsp of soy sauce and the 1/3 Tbsp of dark soy sauce for that extra umami boost. (If you don’t have dark soy sauce, you can slightly increase the amount of regular soy sauce.) Finally, add 1 bowl of cooked rice. Using your spatula, break up the rice clumps and stir-fry everything together quickly until the rice is evenly coated with the soy sauce mixture. Ensuring each grain of rice is well-seasoned is key.

Step 4

Once the fried rice is partially cooked, push it to one side of the pan. Add a little more vegetable oil to the cleared space. Crack the egg into the hot oil and scramble it quickly with a chopstick or spatula until it forms fluffy curds. When the egg is about 80% cooked and still slightly moist, mix it into the fried rice and continue to stir-fry briefly. The egg will coat the rice grains, making the fried rice even smoother and more savory.
