Savory Garlic Pancake with Roasted Garlic Flavor
A Delicious Garlic Pancake, Extra Nutty from Roasted Garlic!
My son loves roasted garlic, and I love jeon (Korean pancakes), so I decided to combine them! This is how ‘Garlic Jeon’ was born. It’s packed with the rich aroma of garlic, made even more delicious with the addition of roasted garlic.
Main Ingredients- 15 whole garlic cloves (to be roasted)
- 1 Tbsp minced garlic
- 1/4 zucchini (thinly julienned)
- 1/3 tsp salt
- 2 Tbsp grapeseed oil (or cooking oil)
Batter Ingredients- 50g pancake mix (approx. 1/2 cup)
- 1 large egg
- 50ml water (approx. 1/4 cup)

Cooking Instructions
Step 1
First, let’s prepare the batter. In a bowl, add 50g of pancake mix.

Crack in 1 large fresh egg.

Pour in 50ml of water (about 1/4 cup using a measuring cup). Whisk thoroughly with a whisk or spoon until smooth and well combined, ensuring there are no lumps. The batter should have a moderate consistency, not too thin.

Now, heat a pan over medium heat and add 2 tablespoons of grapeseed oil. Tilt the pan to ensure the oil coats the entire surface.

Wash the whole garlic cloves thoroughly and either halve them or leave them whole. Place the garlic in the heated pan with the oil and slowly roast over medium-low heat until golden brown and fragrant. Roasting deepens the garlic’s sweetness and nutty flavor.

Add the well-roasted garlic (or garlic slices) to the prepared batter and mix gently. Ensure the garlic is evenly distributed within the batter.

Add 1 tablespoon of minced garlic to further enhance the garlic flavor. The combination of roasted and minced garlic will create a richer, more intense garlic aroma.

Prepare 1/4 of a zucchini and julienne it thinly. The crisp texture of the zucchini will add another delightful layer to the pancake.

Finally, add 1/3 teaspoon of salt to season everything evenly. Stir well to combine all the ingredients. Your pancake is now ready to be cooked.

Add a generous amount of oil to the heated pan. Ladle portions of the batter onto the pan and spread them thinly. Cook over medium-low heat, flipping occasionally, until both sides are golden brown and crispy. Be mindful of the heat to prevent burning.
