A hearty breakfast featuring a deeply flavorful freshwater snail Doenjang stew and a colorful stir-fry of cabbage and eggs.
Freshwater Snail Doenjang Stew Ingredients- 150g Freshwater Snails (cleaned and drained)
- 1 Potato (peeled and cut into bite-sized pieces)
- 1/3 Zucchini (sliced into half-moons)
- 1/5 Carrot (thinly sliced)
- 1/3 Onion (sliced)
- 2 Stock Cubes (for broth)
- 2 Cups Water (approx. 400ml)
- 1 Tbsp Doenjang (Korean fermented soybean paste, approx. 20g)
- 1/2 Tbsp Minced Garlic
- 1/2 Red Chili (seeds removed, thinly sliced, for a touch of spice)
Simple Stir-fried Cabbage and Eggs Ingredients- 5 Cabbage Leaves (cut into bite-sized pieces)
- 1/5 Carrot (thinly julienned)
- 1/3 Can Spam (diced small)
- 1/2 Tbsp Minced Garlic
- Sesame Oil (a little)
- Herb Salt (or salt and pepper to taste)
- Sesame Seeds (a pinch, for garnish and nutty flavor)
- 2 Eggs
- 5 Cabbage Leaves (cut into bite-sized pieces)
- 1/5 Carrot (thinly julienned)
- 1/3 Can Spam (diced small)
- 1/2 Tbsp Minced Garlic
- Sesame Oil (a little)
- Herb Salt (or salt and pepper to taste)
- Sesame Seeds (a pinch, for garnish and nutty flavor)
- 2 Eggs
Cooking Instructions
Step 1
Prepare the vegetables for the stew. Peel the potato and cut it into approximately 2cm cubes. Slice the zucchini into half-moons, and thinly julienne the carrot and onion. Have your cleaned and drained freshwater snails ready.
Step 2
In a pot, combine 2 cups of water and the 2 stock cubes. Bring to a boil over medium-high heat. Once boiling, add the prepared potato, zucchini, carrot, and onion. Cook over medium heat until the vegetables are tender. Add the freshwater snails at this stage.
Step 3
Once the vegetables are cooked, dissolve 1 tablespoon of Doenjang through a sieve into the pot. It’s important to fully dissolve the paste to avoid clumps. After adding the Doenjang, stir in the minced garlic and sliced red chili. Let it simmer for a few more minutes to meld the flavors. Your delicious freshwater snail Doenjang stew is ready!
Step 4
Now, let’s make the stir-fried cabbage and eggs. Cut the cabbage leaves into bite-sized pieces. Dice the Spam into small cubes, and julienne the carrot to a similar size as the cabbage.
Step 5
Heat a little cooking oil in a pan over medium heat. Add the minced garlic and sauté until fragrant, being careful not to burn it. Once the garlic aroma is released, add the diced Spam and stir-fry until lightly browned.
Step 6
Add the cut cabbage and carrot to the pan and stir-fry with the Spam until the vegetables soften. Season with herb salt (or salt and pepper to your preference). Pour in the 2 beaten eggs and stir continuously until the eggs are cooked through, creating a soft, scrambled texture.
Step 7
Turn off the heat and sprinkle with sesame seeds for added aroma and flavor. Serve the savory Doenjang stew alongside the flavorful stir-fried cabbage and eggs for a satisfying and wholesome breakfast.
