  • 200g Garlic Scapes (approx. 1 bunch)
  • 30g Dried Shrimp (amount adjustable to your preference)

Seasoning Ingredients

  • 2 Tbsp Soy Sauce (approx. 30ml)
  • 2 Tbsp Cooking Syrup or Oligosaccharide (approx. 30ml)
  • 1/2 Tbsp Oyster Sauce (approx. 7.5ml)
  • 2 Tbsp Olive Oil or Cooking Oil (approx. 30ml)
  • A little Sesame Oil
  • A little Sesame Seeds

Cooking Instructions

Step 1

First, trim the unappetizing parts of the garlic scapes and cut them into 3cm lengths. Soaking the cut garlic scapes in cold water with about 1 teaspoon of vinegar for 5 minutes can help enhance their crispness and freshness. Ensure they are completely drained of water.

Heat a dry pan over medium heat. Add the dried shrimp and stir-fry for about 5-10 seconds. This quick stir-fry removes any fishy odor and brings out their nutty aroma. Transfer the stir-fried shrimp to a separate bowl to cool.

In a small bowl, combine 2 Tbsp of soy sauce, 1/2 Tbsp of oyster sauce, and 2 Tbsp of cooking syrup. Mix well to create the sauce. Taste the sauce at this point and adjust the sweetness or saltiness to your preference. The slightly sweet and savory balance is key.
