  • Dried Filefish (Jwi-po) 30g (use the crispy kind)
  • Green Onion 10g (white and green parts can be used)
  • Red Chili Pepper 5g (for color, optional)
  • Eggs 2 large (fresh eggs recommended)

First, prepare the dried filefish. Trim off any tough fins or edges. Cut the fish into thin strips about 1cm wide, then chop these strips into small pieces roughly 1-2cm long. This will help them mix well with the egg and create a pleasant texture when cooked.

Next, prepare the vegetables. Finely chop the green onion, including both the white and green parts. If using a red chili pepper, remove the seeds and mince it finely as well. Finely chopped vegetables add beautiful color and enhance the overall flavor of the pancake.

In a mixing bowl, crack the 2 eggs. Whisk them thoroughly with a fork or whisk until the yolks and whites are well combined and smooth. Beating the eggs well will help the fish and vegetables bind together nicely for easier cooking.

Add the prepared chopped dried filefish, minced green onion, and minced red chili pepper to the beaten eggs. Use a spatula or spoon to mix everything together until well combined. If you prefer, you can add a tiny pinch of salt or pepper, but the natural saltiness of the dried filefish is often sufficient.

Heat a frying pan over medium-low heat and add about 4 tablespoons of cooking oil. Once the oil is shimmering, ladle portions of the mixture into the pan, forming small, round pancakes. The eggs should be set, and the fish and vegetables cooked, creating delicious Jwi-po Jeon.
