  • 600g Pork shoulder or leg, thinly sliced
  • 1/2 Onion
  • 2/3 Scallion
  • 2 Tbsp Doenjang (Korean soybean paste)
  • 2 Tbsp Soy sauce
  • 3 Tbsp Mirin (rice wine)
  • 3 Tbsp Oligodang (corn syrup or honey)
  • 1 pouch (80ml) Apple juice
  • 1 Tbsp Minced garlic
  • 1 Tbsp Toasted sesame seeds
  • 1 Tbsp Sesame oil
  • Pinch of Black pepper

Begin by preparing the pork. Place the thinly sliced pork shoulder or leg on paper towels and gently press to absorb any excess moisture or blood. This step is crucial for eliminating any gamey odor and ensuring a clean, savory taste. Both cuts of pork work wonderfully for this dish.

Next, prepare the vegetables. Thinly slice half an onion into strips. Take about two-thirds of a scallion, cut it in half lengthwise, and then chop it into thick pieces. Cutting the vegetables slightly larger will help them retain a pleasant texture after stir-frying.

In a large mixing bowl or directly in your wok/pan, combine the patted-dry pork. Add the apple juice (80ml), mirin (3 Tbsp), soy sauce (2 Tbsp), a pinch of black pepper, minced garlic (1 Tbsp), oligodang (3 Tbsp), doenjang (2 Tbsp), and sesame oil (1 Tbsp). Add the prepared sliced onion and scallions. Gently mix everything together with your hands, ensuring the marinade coats the pork and vegetables evenly. While you can stir-fry immediately, letting it marinate in the refrigerator for about 30 minutes will allow the flavors to meld even further, resulting in a richer taste.

Heat your wok or pan over medium heat. Add the marinated pork and vegetables. Using a spatula, stir and break up the pork to ensure even cooking. Cover the pan and cook for about 12 minutes, lifting and stirring occasionally. The lid helps to steam and tenderize the pork. Once cooked, taste the stir-fry and adjust the seasoning if needed by adding more doenjang or soy sauce to suit your preference. Finish by sprinkling toasted sesame seeds over the top for added aroma and nutty flavor.
