A Delicious Recipe for Doenjang-Marinated Pork Neck, Grilled to Perfection
Marinate pork neck in a savory doenjang (fermented soybean paste) sauce and grill it like ‘Maekjeok’ for a wonderfully sweet and salty taste. It has hints of pork ribs and the doenjang marinade complements the pork beautifully, creating a truly delightful dish.

Cooking Instructions
Step 1
Gently pat the pork neck slices with paper towels to remove any excess blood. Then, cut the pork into bite-sized pieces, about 2-3 cm thick, for easy eating.

Prepare the flavorful doenjang marinade. In a bowl, combine 1 Tbsp doenjang, 2 Tbsp soy sauce, 2 Tbsp oligosaccharide, 1/2 Tbsp sugar, 1 Tbsp mirin, 1 Tbsp plum extract, 1/2 tsp ginger powder, and 1 Tbsp minced garlic. Finish with a pinch of black pepper and mix everything thoroughly until well combined. (Sesame oil is omitted here; you can add 1 Tbsp if desired).
Step 3
Put on a pair of clean disposable gloves. Pour the prepared doenjang marinade over the cut pork neck slices. Now, gently massage the marinade into the pork with your hands, ensuring each piece is evenly coated. Think of it as a tender massage for the meat.

Cover the bowl with plastic wrap, sealing it tightly. Refrigerate the marinated pork for at least 30 to 40 minutes. This marinating time allows the flavors to deeply penetrate the meat, making it more tender and delicious.

Heat a frying pan over medium heat and add a little cooking oil. Place the marinated pork slices in the hot pan. Cook over medium heat; avoid high heat, as this can burn the outside before the inside is cooked through.

Once one side of the pork is nicely browned, flip it over and cook the other side until golden brown. Continue to cook, allowing the sauce to reduce and caramelize in the pan, until most of the liquid has evaporated.

Once the pork is cooked through, slightly increase the heat to high for a minute or two. This final sear will create a beautiful, slightly crisp exterior with a delightful caramelized finish on both sides.
