Ingredients

  • Doenjang (fermented soybean paste) 2 Tbsp
  • Dried kelp (for broth)
  • Dried anchovies (for broth) 1 pack
  • Water 500ml
  • Vegetables for jjigae 1 cup (e.g., potato, zucchini, green onion, mushrooms, onion, radish, etc.)
  • Beef brisket 100g (thinly sliced, like for shabu-shabu)

Cooking Instructions

In a pot, add 500ml of water, dried kelp, and a pack of dried anchovies. Bring to a boil over medium heat to create a flavorful broth. Remove the kelp after about 5 minutes of boiling to prevent a bitter taste.

Once the broth has developed enough flavor, remove the anchovy pack. Then, place 2 tablespoons of doenjang in a fine-mesh sieve and dissolve it into the pot. This method ensures the doenjang blends smoothly without lumps.

Using a spatula or ladle, stir the doenjang thoroughly until it is completely dissolved and the broth is clear. If you’re cooking in a ttukbaegi (earthenware pot), this step further deepens the soup’s flavor.

Prepare the vegetables for the jjigae. Chop your favorite vegetables like potatoes, zucchini, green onions, mushrooms, onions, or radish into bite-sized pieces (about 1.5-2 cm). Cutting them into larger pieces adds a satisfying texture.

Add all the prepared vegetables to the pot at once and bring to a boil over high heat. As the vegetables cook, they will contribute to a richer soup flavor.

Carefully add the thinly sliced beef brisket (shabu-shabu style) to the pot. It’s best to add the meat gently to prevent it from breaking apart.

As the doenjang jjigae simmers, foam and fat from the beef may rise to the surface. Skim off this foam and fat with a spoon to make the broth cleaner and lighter.

Once all the ingredients are well combined and bubbling merrily, continue to simmer for about 3 more minutes. When the vegetables and meat are tender and the flavors have melded beautifully, your delicious and savory Doenjang Jjigae is ready! Enjoy it hot with a bowl of rice.
