Today, I’m sharing a simple yet satisfying recipe for tuna mayo rice balls! They’re perfect for your husband’s lunchbox or as a delightful snack for kids. Adding some nostalgic pink sausage patties alongside will complete a more abundant meal. 🙂

Rice Ball Ingredients

  • 2 bowls of brown rice (warmed)
  • 1 can of tuna, drained (approx. 200g)
  • 2 teaspoons of salt
  • A pinch of sesame seeds
  • 1 teaspoon of sesame oil
  • 3 tablespoons of mayonnaise
  • Seasoned seaweed flakes (gim) to taste
  • A pinch of black pepper
  • 3 strips of kimbap pickled radish (finely chopped)

Cooking Instructions

Step 1

Place the 2 bowls of warm brown rice into a large mixing bowl. It’s crucial to completely drain the oil from the canned tuna using a sieve; this prevents the rice from becoming mushy and preserves the savory flavor. Add the drained tuna on top of the rice.

Now it’s time to add the seasonings that will enhance the rice balls’ savory taste. Season with 2 teaspoons of salt, a pinch of sesame seeds for a nutty aroma, and a dash of black pepper to remove any fishy odor. Drizzle 1 teaspoon of sesame oil for shine and fragrance, and generously add 3 tablespoons of mayonnaise, the key to its creamy texture.

Prepare 3 strips of kimbap pickled radish to add a crunchy texture and a sweet-and-sour flavor. Finely chop them on a cutting board. Chopping them finely will help them mix evenly with the rice and provide a delightful texture with every bite. Add the chopped radish to the bowl and gently mix it with the rice and other ingredients until well combined.

Finally, add a generous amount of seasoned seaweed flakes (gim) to further enhance the flavor of the rice balls. Gently mix with your hands, being careful not to mash the rice grains, until all ingredients are uniformly blended. Your delicious tuna mayo rice balls are now ready to be shaped!

Scoop portions of the prepared mixture and gently roll them into bite-sized, round rice balls. Lightly wetting your hands with water or sesame oil can help prevent the rice from sticking and make shaping easier. Arrange these rice balls neatly in your lunchbox. If you make some nostalgic pink sausage patties and place them between the rice balls, you’ll have a visually appealing and delicious lunchbox.
