  • 8 pieces seasoned fried tofu pouches (inarizushi no moto)
  • 3 pieces mentaiko (seasoned pollock roe)
  • 2 bowls warm cooked rice
  • 2 Tbsp mayonnaise
  • 1/2 Tbsp sake (mirin or cooking wine)
  • 1 Tbsp sesame oil
  • Wasabi, to taste (optional)
  • Baby greens, for garnish (optional)

Cooking Instructions

Step 1

Gently make a small slit on the skin of the mentaiko with a knife. Carefully scoop out only the roe (the inside part) using a spoon. Avoid using the skin as it can affect the texture.

Step 2

In a bowl, combine the scooped mentaiko roe, 2 tablespoons of mayonnaise, and 1/2 tablespoon of sake. Mix well with a whisk or spoon until a smooth mentaiko mayo sauce is formed. The sake helps to reduce any fishy odor and adds a pleasant flavor.

Step 3

In a separate bowl, combine 2 bowls of warm cooked rice with the included seasoning flakes from your inari sushi kit and 1/2 portion of the provided sushi vinegar (or sweet vinegar). Add 1 tablespoon of sesame oil. Gently mix with a rice paddle or spoon, being careful not to mash the rice grains, to season the rice. Taste and add the remaining sushi vinegar if needed.

Step 4

Drain the liquid from the seasoned fried tofu pouches (inari pouches) by placing them in a sieve. Gently press them with your hands to remove excess moisture; be careful not to tear them. Fill each pouch with about two-thirds of the prepared sushi rice. Overfilling will make it difficult to add the mentaiko mayo topping.

Step 5

Generously spoon the mentaiko mayo sauce, prepared in step 1, onto the top of each inari sushi. Use the back of a spoon to shape it nicely for an appealing presentation.

Step 6

Finally, garnish with a few baby greens if desired, or serve with a side of wasabi for those who enjoy a bit of heat. The salty mentaiko combined with the mild spiciness of wasabi creates a wonderfully balanced and unique flavor profile.
