Sometimes, impulse buys end up in the fridge, waiting to be used. I decided to make these ‘Matssal Tongkkae Jeon’ using crab sticks nearing their expiration date and some leftover vegetables. While the ingredients are simple, the result is surprisingly delicious! These pancakes are chewy on the inside and slightly crispy on the outside. Enjoy this simple yet delightful dish!

First, prepare the crab sticks. Take 8 short crab sticks and gently shred them lengthwise into thin strips. Shredding them this way will result in a softer texture and help them absorb flavors better.

Next, prepare the vegetables. Finely julienne 1/4 onion and 3 perilla leaves after washing them thoroughly. The aromatic perilla leaves and the sweetness of the onion will create a wonderful flavor balance. Add 1 tablespoon of sesame seeds to the shredded crab sticks and vegetables for a nutty aroma.

Now, let’s make the batter. Crack 2 eggs into a bowl and season with a pinch of salt. Whisk the eggs to combine, then add the shredded crab sticks, julienned vegetables, and sesame seeds.
